skip to main | skip to sidebar Examples of My Design Work Sunday, September 13, 2009 Sunday Stew Spicy Coconut- Curry Chicken Ingredients:6 chicken legs, split into drumsticks and thighsKosher saltVegetable oil1 yellow onion, sliced2 garlic cloves, minced1- inch piece fresh ginger, peeled and minced3 Tbsp curry powder, preferably Madras1 tsp ground cumin1/2 tsp cayenne pepper1 can (14 0z.) chopped tomatoes, drainedAbout 1 can (15 oz.) light coconut milk, divided1 c frozen, thawed green peas 1/4 c chopped fresh cilantro leavesPreparation:1.) Rinse chicken and pat dry with paper towels. Sprinkle with salt.2.) Coat bottom of 5- to 7- quart Dutch oven with thin film of oil andset over medium- high heat. When oil shimmers, add chicken, skin sides down, without crowding; brown inbatches if necessary. Cook until, skin is golden brownand chicken releases easily from pot when lifted with thongs, about 5 minutes. Turn pieces over and cook untilthey brown and release easily on the other side, about5 minutes more. Transfer browned chicken to plate.3.) When last batch of chicken has been removed, add oniongarlic, and ginger to pot. Cook, stirring until vegetablesare soft and fragrant. about 3 minutes. Add curry powder,cumin, cayenne, and 1/2 teaspoon salt. Cook for 30 secondsuntil spices are fragrant. Stir in tomatoes and 1 cup ofcoconut milk. Stir well and let come to a boil.4.) Return chicken and any accumulated juices to pot. Chickenshould be surrounded by sauce, but not submerged in it, so that topmost skin is exposed. ( if there is not enough liquid in pot,add remaining coconut milk from can )5.) Reduce heat and simmer, uncovered, until chicken is opaqueat bone, about 45 minutes. Even if you have enough work now, create a plan to find additional clients. If you wait until you are out of work (and money), you create additional stress for yourself. Dedicate at least half a day per week to locating new clients, and use some or all of the following tips to do so.1.) Build your network. Online networking is beneficial to entrepreneurs and freelancers alike. Most freelance work is channeled through current or extended networks. Think about whom you have in your network: You might be surprised at how many people you could contact who may have an interest in what you do, if not for themselves, for someone else in their network. You should, of course, be part of several social media sites, including Twitter, Facebook, LinkedIn and Ning. They all offer potential opportunities to expand your network and get more clients. 2.) Be visible. There are exhibitions, conferences, magazines and online forums attached to most professions, including yours. Be active. Contribute regularly. Make use of profiles and signature lines to include links to your freelance resume and portfolio so a potential client can easily look at your work samples and be able to contact you . Professional associations usually have job postings for their members. Consider searching for a professional association in your discipline; the Internet Public Library has a list of associations and their websites, organized by discipline. 3.) Stay in contact with clients. Keep in touch with your clients. Satisfied clients will likely refer you to their friends and colleagues for future work. Plus, keeping in touch with old clients can lead to additional work down the road. 4.) Check out job sites. Job-posting sites for freelance work mostly fall into three categories: job-bidding sites, resume-posting sites and job-listing sites. Hiremymom.com, getafreelancer.com, craigslist.org or oodle.com are often good sources for freelance postings. Be aware that job bidding sites such as eLance often favor overseas freelancers who work inexpensively. 5.) Find people who need you. If you write web content, optimize content for SEO or design sites, search the web. Start with an industry you have experience with and look at different web pages. If you're a web designer, for example, you may want to look for sites that could use improvement in design and accessibility. Is it obvious that the writing needs work or that the web design is shoddy? Send the company a personal e-mail. Explain the weaknesses you see (be nice; the boss could have created the site) and describe how you can help to increase the company's profits. 6.) Optimize your own website. You can optimize your site for when you get visitors. Businesses find you through search engine results, so it pays to have an optimized website that ranks well in search engines. Sell yourself; your products and services, credentials, experience, links to your work and testimonies are all important features. I struggle with finding a routine but, with a full time job, small business and four children chaos is the norm and routines get interrupted frequently. I honestly haven't found a routine that has worked 100% and stuck. I can only pray that the day will come in the near future.And, what is the 80/20 rule? Let's get some background on this. 80-20 rule: States that 80% of your revenue will come from the top 20% of your customers. Conversely, 20% of your results consume 80% of your time. Your numbers may vary from this rule, but principle holds true: all parts of your business are not equally profitable. Time spent getting new customers, managing employees, etc. is "overhead." These are necessary but nevertheless "non-billable" pursuits. The things you do that you are actually paid for probably consume a smaller proportion of your time. In most cases, especially in relationships, you will only get 80% of what you NEED and you will hardly get the other 20% that you WANT in your relationship. There is always another person (man or women) that you will meet and that will offer you the other 20% which is lacking in your relationship that you WANT And believe me, 20% looks really good when you are not getting it at all in your current relationship. And you will find a woman or man who will need you and pursue you and go loco over you more than your spouse ever did.Because no wife or husband is perfect. Because a spouse will only have 80% of what you're looking for. So adultery takes place when a husband or wife looks for the missing 20%. Do you know that there are many first class passengers who are miserable in first class -- because they are not riding in a private Lear Jet?The main message???If you start appreciating what you have right now, wherever you are, you are first class!I think everyone in relationships need to take heed to this advice. The grass always looks greener on the other side then you get there and notice it's a bunch of crap!Isn't it funny how 20% of your customers from a business can bring in 80% of your revenue, which is great! Then 20% of what you believe you are missing in your relationship, you decide to go out and get that elsewhere causing you to lose the 80% of what you had. This is relationship suicide. Most situations like these probably jumped in the sack with the lousy 20% and ended up losing the 80% significant other for a 20% fling. Then the guilt sets in. How disturbing! So really, is that 20% that you don't have really worth losing the 80% you do have? I could apply this mathematical equation to many different scenarios and come out with tons of different answers. I was so surprised and felt spoiled by them. I'm usually the one preparing all the meals. They made French Toast, Scrambled eggs and Turkey Bacon. It was the best breakfast I've had in a while.My favorite place to dine for breakfast when I'm not cooking it is IHOP (International House of Pancakes) I usually get the International Passport Breakfast or Blueberry Pancakes with scrambled eggs and a side of bacon, along with some hot chocolate or Sweetened Iced Tea. I love blueberries! I love blueberries in muffins, pancakes or just plain ole' blueberries.With breakfast on the brain, I've decided to post a homemade blueberry pancake recipe.Blueberry Pancakes Ingredients:1-3/4 cups flour2 tablespoons sugar4 teaspoons baking powder1 teaspoon salt2 eggs1-3/4 cups milk1/4 cup vegetable oil1 cup blueberries, fresh or frozen (thawed and drained)Preparation: large bowl, combine dry ingredients with wire whisk. In a small bowl, combine eggs, milk and oil.Slowly add wet ingredients to dry ingredients. Mix only until large lumps are gone. Gently fold in berries. Heat griddle or frying pan. Grease pan lightly. Use a 1/4 cup measuring cup to form each pancake in pan. Cook until bubbles appear and edges are brown. Flip pancakes and cook for a minute or so longer. Makes about 16 4-inch pancakes.I haven't tried this recipe yet, but I plan to very soon. Once I get this recipe down I won't need to go to IHOP for Blueberry Pancakes anymore. Another penny saved!
